Filocups with goat cheese and quince chutney

Om zo uit de hand te eten is de kweepeer niet aan te raden. Maar wanneer je deze geelgroene peer verwarmt verandert het harde, zure vruchtvlees in een heerlijk ingrediënt voor zoete én hartige gerechten. Maak er eens een heerlijke kweepeerchutney van! 


4 quinces
2 shallots (finely chopped)
40g butter
200g sugar
200ml apple cider vinegar
10 sheets of filo pastry
20g butter (melted)
350g soft goat cheese
Hand of pistachio nuts (peeled and chopped)
2 cupcake trays

Peel the quinces, remove the cores and cut into cubes. Heat the butter on a low heat in a saucepan and fry the shallots. Then add the quince and fry for approx. 5 minutes. Add apple cider vinegar and sugar. Let it simmer for about an hour until the quince is soft and the sugar has thickened.

Preheat the oven to 200°C. Cut the filo pastry sheets in four and grease all the sheets on both sides with the melted butter. Also grease the cupcake tray with the melted butter. Place a filo pastry sheet in one of the cups and place the next sheet diagonally. Gently push them into the tray to create cups.

Bake the filo pastry cups in the oven for approx. 5 minutes until they are almost done. Then take them out and add the goat cheese, quince chutney and pistachio nuts in the cups and put them back in the oven until the filo pastry cups are golden brown and crispy.

Save the remaining quince chutney for a different recipe.
