Jackfruit & coconut nuggets
It is not easy to peel such an enormous fruit as jackfruit. We know everything about that. Fortunately we have peeled jackfruit in our assortment! The hard work has already been done and the result is a handy package of 200 grams.
Making the above jackfruit & coconut nuggets will be a piece of cake!
400g peeled jackfruit
0.5 teasp. salt
2 eggs (beaten)
110g panko bread crumbs
150g grated coconut
sunflower oil to fry
3 tbsp. mayonnaise
Siracha to taste
Prepare three bowls. Mix the flour with the salt in one of the bowls. Use the second bowl for the beaten eggs and mix the panko bread crumbs and grated coconut in the third bowl.
Dip the peeled jackfruit in the flour first, then in the eggs and finally in the panko-coconut mix.
Heat a layer of sunflower oil in a large skillet over medium heat. Fry the jackfruit until it is golden brown and crispy, about 3 minutes per side. Drain on a paper towel.
Mix the mayonnaise with the siracha to taste and serve the jackfruit & coconut fritters with the dip.
